Coconut Lemon Bliss Balls

Are you looking for a protein packed snack that you can just pop into your mouth and gives maximum satiety? In come our Coconut Lemon Bliss Balls are so tasty you might wonder if they are healthy for you.

It requires a little advanced prep but make a big batch and you’ll get a week’s worth of snacks to nosh on.

It’s also got collagen peptide powder that will help your skin get a dose of pampering from the inside out.

 

Recipe:

  • 1 cup raw walnuts, soaked
  • 10-12 Medjool dates, soaked
  • Zest of half a lemon
  • 2 tablespoons of vanilla protein powder
  • 2 scoops of Sparkle Skin Boost with Verisol
  • ½ teaspoon of vanilla oil
  • 1 cup of coconut flakes

 

Soak the walnuts and dates in distilled water overnight in separate bowls — this would make it easier to blend in a food processor. Make sure you keep the water from the dates, but you should strain the walnuts. Whizz the coconut flakes in your food processor and set aside.

Blend the dates without the water in the food processor to get a sticky paste. Pop in the rest of the ingredients and add teaspoons of date water gradually every now and again. You don’t want your protein balls to have too much liquid as you want the consistency to be dough-like.

Mold the dough into small balls (you should get 12-15 balls with this recipe) and roll them in coconut flakes. Keep in the freezer for a denser texture.
