Coconut Milk Chia Pudding

Despite their teeny tiny size, chia seeds are nutritional powerhouses. They are rich in fiber, omega-3 fats, protein, and calcium.

Because of their ability to gel and thicken, chia seeds are so versatile and so easy to incorporate into your diet. They are great in smoothies, sauces, salads, and our ultimate favorite, chia seed pudding.

The awesome thing about chia puddings is that most of the prep work is done the night before and your morning becomes so much simpler.

Here is our simple and delicious version that has no sugar and will keep you satisfied for hours. The coconut milk is such a flavorsome ingredient that you won’t be missing any sweetener. Our Sparkle orange powder with stevia will also lend a bit of citrusy sweetness to this tasty breakfast.

 

Recipe:

  • 1 cup of unsweetened coconut milk
  • 2-3 tablespoons of chia seeds
  • Dash of vanilla oil or essence
  • 1 scoop of Sparkle Skin Boost with Verisol
  • 1 tablespoon of granola
  • Handful of diced nectarine or peach

 

Soak the chia seeds in coconut milk the night before and store in the fridge. In the morning, add the Sparkle collagen peptide powder, vanilla, and toppings.

We love noshing on low sugar fruit like nectarines, peaches, and berries and always have to top our chia puddings with them. A sprinkle of granola gives this soft pudding some crunch. There you have it — a breakfast sensation anyone can make!
