Harvest Salad

If you’re looking for a light but tasty salad recipe for your thanksgiving meal, we’ve got one for you that will also help keep your skin glowing during the holidays.

Pop in a scoop of collagen peptide powder into the dressing for a beauty boost and the orange flavor will also lend a lovely citrusy kick that balances out the sweetness of the roasted pumpkin and red apple.

This salad is full of fiber and protein that can be quite a meal on its own — it’s so good, you’ll make it again and again after the festive season.

 

Salad recipe:

  • 1 roasted kaboucha pumpkin, cubed
  • 4 cups of kale
  • Juice of half a lemon
  • Pinch of sea salt
  • ½ red apple, diced
  • 2 cups of cooked quinoa
  • 2 cups of cherry tomatoes
  • 1 cucumber, sliced

 

Dressing recipe:

  • 2 small cloves of garlic
  • 4 tablespoons of white wine vinegar
  • 4 tablespoons of extra virgin olive oil
  • Pinch of black pepper
  • Pinch of sea salt
  • 1 scoop of Sparkle Skin Boost with Verisol

{Serves 4}

 

In a food processor, pulse the dressing ingredients a few times till the garlic is well minced. Massage the kale with lemon juice and salt until it wilts and becomes softer. Put all the salad ingredients in a large serving bowl, drizzle the dressing over everything, and toss well.
