We just love the mental clarity and energy matcha gives us so we’ve put our thinking hats on and blended it up with avocado, our other love to make a breakfast chia pudding.

Did you know that matcha contains over 100 times more antioxidants than regular green tea? And since the powder is ground from whole tea leaves that are not strained in the production process, matcha is a lot more potent for this reason.

What’s even more special is that matcha helps you relax while supporting the production of happy hormones, serotonin and dopamine, all thanks to thanks to amino acid L-Theanine.

This pudding is rich in omega fatty acids from the coconut milk, avocado, and chia seeds, which your skin would lap right up and this satisfying meal should sustain you for long hours till your next meal.

 

Recipe

Chia layer:

  • 1 cup coconut milk
  • 2 tablespoons of chia seeds
  • 2-3 drops of vanilla oil

Matcha layer:

 

Prep the chia layer the night before to get the the chia seeds to gel nicely with the coconut milk. Pop the ingredients for the matcha layer into a food processor and whiz till smooth. In a mason jar or glass, alternate the chia and matcha layers and then dig in with a satisfied sigh.
